Though some of the knights-such as the one Spike punched causing his chip to go off at one point-were human, there were apparantly some demons among them, as Dante Chavalier claimed that Buffy had killed 10 of his men, and Buffy did indeed kill at least one of them with an axe, even though it was confirmed by Giles just two episodes later that Buffy had never killed a human before. This implies that the knight Buffy killed with an axe and the 10 dead knights Dante was talking about were demons, as some demons-like Whistler, for example-had human form, so this is entirely possible.

The Knights of Byzantium were a military order composed by both knights and clerics. Sworn enemies of Glorificus, they came into conflict with Buffy and the Scooby Gang because of their attempts to assassinate Buffy's sister, Dawn. They were fanatically devoted to their mission of destroying the Key in order to prevent it from falling in Glory's hands.
